Pasta Primavera

Ingredients:
- 16 ounces of whole wheat spaghetti
- 2 cups broccoli florets
- 1 cup cauliflower florets
- 2 whole carrots, sliced
- 1 whole zucchini sliced, inner seeds removed
- 1 yellow squash sliced, inner seeds removed
- 1/2 red onion, sliced
- 5 ounces green beans
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- kosher salt, to taste
- freshly ground pepper, to taste
- 1 quart marinara sauce (available for purchase at Luigi’s)
Directions:
- Start by bringing a large pot of salted water to a boil. Once boiling, add the whole wheat spaghetti and cook according to the package instructions until al dente (about 8-9 minutes.) When the pasta is done, use a slotted spoon or tongs to transfer the pasta to a large bowl. Do not drain the water.
- In the same pot of boiling water, add the broccoli, cauliflower, carrots, zucchini, yellow squash, and green beans for 1-2 minutes. Cook until slightly tender but still crisp. Drain the vegetables and transfer them to a large bowl.
- In a large skillet or pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute or until it becomes fragrant. Add the vegetables to the pan and sauté for an additional 2-3 minutes, allowing them to absorb the flavors of the garlic and olive oil. Season the vegetables with salt and pepper.
- Pour in the marinara sauce and stir well to combine with the vegetables. Let the sauce and vegetables simmer together until everything is heated through. Add the drained pasta to the pan with the sauce and vegetables. Toss everything together gently to ensure the pasta is well coated with the sauce and the vegetables are evenly distributed. Enjoy!
