Rebel Salad Bowl

Serves 2-3
Ingredients
Citrus Vinaigrette:
- 3 tbsp extra virgin olive oil
- 2 tbsp blue agave syrup
- 2 tbsp red wine vinegar
- 1 tbsp dijon mustard
- juice of half an orange
- juice & zest of one lemon
Salad Bowl:
- 2 cups baby spinach
- 2 ounces quinoa, cooked
- 1 carrot, shredded
- 1/2 small red cabbage, shredded
- 1/2 red onion, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, thinly sliced
- 2 ounces feta cheese, crumbled
- 1 avocado, sliced
Directions
- Add all of the citrus vinaigrette ingredients to a bowl and whisk until well incorporated.
- In a separate bowl add the baby spinach, quinoa, shredded carrots, red cabbage, red onion, and cherry tomatoes. Add 1/4 cup of the citrus vinaigrette and toss together. Reserve the remaining citrus vinaigrette for another use.
- Divide the salad among 2-3 bowls and garnish with cucumber slices, feta cheese, and avocado slices.
